Not many know that Ragù originally comes from France! Yes, don’t tell this to your Italian mates unless you want to start an argument.
During the 1300, Pope da Avignone brought French methods of cooking to the Vatican. These included the slow-cooking of meat and vegetables in a pot, altogether, resulting in a meaty sauces as the vegetables softened into a sauce. This technique was know as ragôut - the contemporary French word for Stew.
Italian chefs, incorporated this technique in their cooking, using local products and in 1773, Vincenzo Corrado, is the first to write about a Neapolitan version of the French stew (ragôut) to be used as a condiment.
About a century later, in 1891, Pellegrino Artusi writes the first recipe for Ragôut alla Bolognese. This version, however did not include tomato passata, but included milk, resulting in a white meaty sauce. The recipe then explains to add the sauce to maccheroni, for Maccheroni alla Bolognese.
Today, we are bringing you a contemporary version of Ragù. There is no compromise on taste, texture or nutrients (there’s actually more and better ones) bringing you a natural recipe that is also ethical and sustainable.
COOKING INSTRUCTIONS: 1. Heat up a splash of oil and a little water on medium heat in a non-stick pan. 2. Add the Ragu’ and let it heat up for 3-5 minutes while keep stirring. 3. Once heated through and thickned up a bit, add it to pasta or you can also use it to do stuffed vegetables like, stuffed peppers, stuffed aubergines and stuffed zucchine. Enjoy!
